Making low carb simple

Instructions

  1. Mix mayonnaise and lemon juice. Set aside for later.

  2. Divide the salmon into serving-sized pieces. Season with salt and pepper.

  3. Rinse and trim the broccoli, including the stem. Chop into bite-sized pieces.

  4. Fry the salmon in half the butter or oil over medium heat for a couple of minutes on each side. Lower the heat towards the end. Remove from pan and keep warm.

  5. Add the remaining butter or oil to the same skillet and cook the broccoli over medium heat for 3-4 minutes or until it is slightly softened and golden brown. Season with salt and pepper to taste.

  6. Serve the fried salmon and broccoli together with a hearty dollop of lemon mayo.

Tip!

Feel free to substitute crème fraîche for the mayo. A drizzle of hollandaise or cowboy sauce are also delicious ways to add healthy fat to this one-skillet wonder!

This recipe was so good and so quick. We still had some hollandaise left so we used that instead of the mayo. This now goes on our take-away night list.

Salmon broccoli and lemon mayo is a combination I independently arrived at. Very good and so quick and easy. Lemon mayo is a staple in my fridge. My mayo also contains turmeric to make it bright yellow and a clove of garlic.

Quick, easy and delicious. I added a tiny sprinkle of sumac to the broccoli to jazz it up a bit.

so if I am making the recipe just for myself, do i use the measurements for 2 serves?
Or, is the lunch the following day factored into the recipe for 1 serving?
    thanks

1 serving = 1 meal for 1 person. If you need leftovers for lunch the next day, you will want to make 2 servings.

I am coming off a low calorie diet where the food is rehydrated and going to start this two week keto diet from Wednesday and I am so excited about having 'real food'. The recipes look delicious!

Would have started on Tuesday but will be away, so rather start proper when at home and evrything is at an arms length.

Do you have any tips for me so that I can be successful?

It was really good and so easy. My son and I both enjoyed it very much. We sprinkled some fresh grated parmesan on the broccoli right before taking it out of the pan. Definitely will make this again.

The most common issues with homemade mayonnaise can be resolved by using a container that is just large enough to fit the blending tool. It may also take additional patience in terms of blending the mayonnaise for a sufficient amount of time.

You can get your mayo back by adding very hot water 1tablespoon at a time while mixing it with a hand mixer. You can also try to cook your mayo on very low heat mixing it constantly.

I'm not hungry in the morning. I have my coffee with a splash of heavy whipping cream, just out of habit, but I am not hungry. I get up most days around 8, and not hungry till sometimes after noon.
Do I have to eat all three meals, or can I do the IF and only have 2 meals?

We recommend eating to hunger. If you're not hungry for breakfast, it's OK to skip it and eat lunch when you get hungry.

Can someone help me to understand the nutrition part? Cause the percentages shown doesn't tally when I try to do my own calculations. I keep getting 60% of fat instead of 78. The reason why I'm counting is because I want to eat something alongside this. Like keto brownies etc. But I need to know the calculations so my body will keep in ketosis

For ketosis and/or weight loss, focus on the carbohydrates rather than fat. This is 5g net carbs so you would need to factor that in when looking for a keto brownie recipe. These are 2g net carbs per serving:

Yes, that would be an easy substitution, but be sure to adjust the nutritional information with the protein you choose to use.

Generally, chicken and pork can make good substitutes for fish but you would need to adjust the baking/cooking time.

My boyfriend and I are starting this together and I’m wondering how to work out the fat limitations / allowances for each individual. I’m 5ft and 9 stone and he is 6ft and 16 stone - surely I would have to have less fat? I’m concerned eating so much will have me put on weight despite the low carbs.

On your main meal plan page, set it so you are cooking for 1 person. Then, the Recipe tab will have the correct information. It will say 1 dinner + 1 lunch.

I’m sorry that doesn’t really answer my question! So is it one serving for lunch and then one serving for dinner? Because my grocery list is set to one person but the meals say 4 servings and i just want to make sure I’m not over eating!

If you are setting the number of servings on the meal plan level, set the meal plan for the number of people eating the plan. If it is just you, set the meal plan for 1. This will generate a shopping list for one person to eat for a week.

This will be dependent on the individual. It is easiest to focus on keeping carbs low, ensure adequate protein, and use fat for satiety. If you would like to count, you can find nutrition information on each recipe or averages per week on meal plans. Many find it helpful just to count carbs. Here is a great guide to fat intake which discusses adjusting fat in your meals to suit your needs https://www.dietdoctor.com/low-carb/how-much-fat. Here is another about protein intake https://www.dietdoctor.com/low-carb/protein.

Ok so I was going to make two servings but the amount of salmon doesn’t seem to add up right. Shouldn’t two servings be 1lb of salmon and not 4/5lb? 4/5lb comes out to just shy of 13oz so that’s 3oz less than a pound. Can you please help?

Due to ingredient sizes, sometimes changing the serving size doesn't translate well. If needed, you could prepare the 4 servings and always have leftovers!
